Special “Salsa” for Vegetarian Chorizo
Ingredients:
- 2 Tomatoes
- 4 Green Tomatoes
- 4 Serrano Peppers
- 1/2 Sliced Onions
- 2 Tablespoons Oil
- 1 Tablespoon Chicken Bullion
Preparation:
A – Boil tomatoes, green tomatoes and serrano peppers and blend together.
B – In a saucepan heat oil and fry sliced onions, add blended tomatoes and peppers, add chicken bullion, let boil for two minutes and set aside.
C – Cover chorizo with eggs with this salsa, directly on the plate, when serving. ¡They are Delicious!

Eggs with Vegetarian Chorizo
Ingredients:
- Vegetarian Chorizo 50grs.
- Eggs Two
- Salt to taste
- Oil
Preparation:
A – Fry the vegetarian chorizo in two tablespoons oil, stirring constantly so it does not stick, add salt to taste.
B – Add the eggs, salt to taste and mix perfectly until it is cooked. ¡Serve with refried beans and a delicious salsa!

Mashed Potatoes with Vegetarian Chorizo
Ingredients:
- Vegetarian Chorizo 100 g.
- White Potatoes 300 g.
- Oil 30 g. (5 Tablespoons)
- Margarine 30 g.
- White Onions 80 g. (1/4 medium Onion)
- Salt to taste Preparation:
A – Boil potatoes, set aside to cool, skin and mash to form a puree.
B – In a saucepan heat 30 g. oil, add 30 g. margarine, add onions and brown, then add potatoes stirring constantly so it do not stick.
C – Separately, fry the Vegetarian Chorizo in two tablespoons of oil, add to the mashed potatoes, add salt to taste and stir perfectly at low heat.
D – This mashed potatoes can also be used for fried tacos, tostadas, etc. Add cream, coleslaw, lettuce and a red or green salsa. ¡They are Delicious!

Beans with Vegetarian Chorizo
Ingredients:
- Vegetarian Chorizo 100grs.
- Refried beans 500 g.
- Asadero or Manchego Cheese 50 g.
Preparation:
A – Fry the Vegetarian Chorizo stirring constantly.
B – Add the beans and grated cheese and stir until cheese has melted and is well mixed with the beans.
C – These beans can also be used for stuffing baked poblano peppers, make fired tacos or delicious tostadas.

Fondue with Vegetarian Chorizo
Ingredients:
- Vegetarian Chorizo 100 g.
- Asadero or Manchego Cheese 200 g.
- Mexican Salsa (Pico de Gallo)
Preparation:
A – Fry the vegetarian chorizo in two tablespoons oil, stirring constantly so it does not stick, add salt to taste.
B – In a shallow ceramic baking dish or ovenproof dish place layers of cheese and Vegetarian Chorizo until all cheese is used up.
C – If you will melt the cheese in a ceramic baking dish, place it on top of a griddle until melted, if on an ovenproof dish, place it in the oven until melted (approx. 20 minutes). ¡It is ready for serving!

PREPARATION:
BOIL CHOPPED POTATOES AND CARROTS. PREHEAT A FRYING PAN AND SAUTÉ THE SLICED ONIONS, ADD THE VEGETARIAN MEAT AND FRY WITH THE ONIONS FOR A SHORT WHILE, STIRRING CONSTANTLY, ADD THE CHOPPED POTATOES AND CARROTS, SAUTÉ FOR ABOUT ANOTHER FOUR MINUTES, STIRRING CONSTANTLY SO IT DO NOT STICK.
IT IS READY FOR SERVING, ACCOMPANY WITH A SALAD, REFRIED BEANS OR PREPARE DELICIOUS TACOS, TOSTADAS, ETC.
IT IS POSSIBLE TO MIX THE VEGETARIAN MEAT WITH 50% SHREDDED BOILED BEEF BEFORE FRYING WITH THE ONIONS.

THESE FRITTERS CAN BE SERVED WITH MASHED POTATOES, A SALAD OR REFRIED BEANS, OR THEY CAN BE USED TO PREPARE DELICIOUS HAMBURGERS.

PINEAPPLE JUICE 1/2 CUP

PREPARATION:
THE 4 TOMATOES ARE BLENDED WITH THE PINEAPPLE (IF YOU LIKE YOU CAN ADD A LITTLE CHOPPED PINEAPPLE), FRY THIS BLEND IN ONE TABLESPOON OIL, ADD THE MEAT BALLS AND BOIL FOR AN ADDITIONAL 20 MINUTES.
NOTE: IF SAUCE IS TOO THICK, ADD A LITTLE MORE WATER OR PINEAPPLE JUICE.
